Montanita is a surfing town on the Ecuadorean coast where we relaxed for a week and learned to surf with a reasonable amount of success. Along the beach vendors sold the biggest freshly harvested oysters we’ve ever seen. They were prepared on the spot in Ecuadorean style with lime juice, salt, pepper, coriander, chopped onions and tomatoes, and salmonella.
